Herbal Recipe: Pumpkin Spice Smoothie

It’s that time of the year when all-things-Pumpkin-Spice hit the shelves, so I felt compelled to offer you one of my favorite seasonal recipes: the pumpkin spice smoothie.

I first tasted a pumpkin smoothie seven years ago at the Mother Earth News Fair where one of the vendors was making them in an eco-friendly bicycle-powered blender (an idea that has since been perfected! It was delicious! Like a liquid slice of pie! She shared her recipe with me, and I have made them every fall since then.

This smoothie is a delicious way to enjoy that fun seasonal pumpkin pie flavor, plus it has the added benefit of fiber, Vitamin A, Vitamin C, and Potassium from the pumpkin, as well as antioxidants and antimicrobials from the spices.

Ingredients: • 1 cup of your favorite milk (dairy or not) • ½ cup pumpkin puree • ½ teaspoon pumpkin spice blend (you can use a premade mixture or make your own using this recipe https://www.livewellbakeoften.com/homemade-pumpkin-pie-spice/) • 1 ripe banana

• 1 teaspoon maple syrup or honey (optional) • 1 teaspoon vanilla extract (optional)

Instructions: Place the first four ingredients in a blender, and blend until smooth. If the mixture is too thick for your liking, add small amounts of milk until it is the desired consistency. The sweetener and vanilla extract are optional, so you can make your smoothie using the first four ingredients and taste it to see if it needs any extra oomph. It may be sweet enough if the banana was very ripe.

Enjoy!
